Go bananas

I love to snack. Especially when I'm at work in my car. I drive from patiënt to patiënt and I don't have the time for breakfast in the morning. For a long time I was looking for something that's keeping me full and is healthy. A while a go I received the cookbook from Pascale Naessens as a present. In the past I've made a lot of cakes but this cake is the real deal! Read on for the recipe below.
Ingredients
- Two cups of oatmeal
- One cup of almond flour
- Two cups of coconut milk
- Two big bananas
- Three tablespoons of honey (optional)
How to make it ?
Cut the bananas into slices. Mix the oatmeal with almond flour, the coconut milk and the slices of one banana. Put on top the slices of the second banana. Pour honey over it. Put the cake 20 minutes in a preheated oven at 180 degrees.
Sometimes I change the recipe. I add coconut flakes, raisins or chocolate chips. Instead of almond flour I use often whole wheat flower because it is cheaper and equally tasty.
